South Chicago Packing Wagyu Beef Tallow – Item of the Day

Every day I bring you an item on Amazon that I personally use or has been purchased by many members of the audience and I have researched enough to recommend.

Today’s TSP Amazon Item of the day is South Chicago Packing Wagyu Beef Tallow.  It is a huge can of it too, 42 ounces to be exact.  Now that I have found this stuff I feel like asking, “where has this been all my life”?  It is just amazing stuff.

South Chicago Packing is a 5th generation family-owned business born in the historic stockyards of Chicago. They take pride in their commitment to excellence, dedication to customers, and passion for all things culinary. Their mission is to maintain this 100 year-old tradition, which is why their specialty fats are sourced from only the best.

Wagyu is some of the most amazing beef fat you can get your hands on.  It has great flavor and a high smoke point.  I use it to sauté and fry just about everything since I found it.   I learned about it from Guga who has two amazing YouTube Channels, Guga Foods and Sous Vide Everything.

The video I discovered it in was one of Guga’s experiment videos and now I can’t find it.  In the video Guga smoked the tallow and smoked butter as well for about an hour.  He put both in the fridge to solidify after that.  He then made three steaks sous vide.  One just seared at the end as typical, one basted with the smoked butter then seared and one with the smoked wagyu tallow.  As you may imagine the wagyu tallow one was the favorite at tasting.

Used sous vide the consensus seems to be don’t cook the steak in the bag with the tallow, rather just use it when searing for best results.  I have done this and can confirm that it makes an amazing difference.  Here is one of Guga’s videos about that.

Again though I do everything with this stuff since finding it.  Veggies, cauliflower rice, fried chicken, you name it.  What’s that?  No fried chicken on keto?  Yea you just fry it skin on with no breading it is delicious, try it. Marinate it, season it, etc and pan fry in beef tallow.  Oh and an over easy egg, dear God, are they amazing when you use this stuff.

One final thing I know many will ask is it from 100% grass fed cattle, the answer is no.  According to the producer…

They are raised grass fed, but finished on a proprietary diet utilizing wet and roasted brewers grains. So therefore they are not 100% grass fed.

Is that perfect, no.  Is it a reason to not use this product, for me no it isn’t.  I am very happy with it but also believe in full disclosure with anything you are going to eat.  So give South Chicago Packing Wagyu Beef Tallow and I don’t think you will ever regret it.

P.S. – You will see some claims that people got an open package, someone removed some of the fat before shipping, etc. in some negative reviews.  I have to say these people are low IQ individuals, no that is not the issue.  Wagyu fat melts are a much lower temp then typical beef tallow.

What happens is some melts and settles, etc.  Just sitting in the cabinet over my stove every time I open it, it looks a little different.  This is due to different ways it settles and rehardens.  Imagine a shipment across the country in various temps and lots of odd settling can occur.

Victorinox 6-Inch Semi Stiff Boning Knife

Every day, I bring you an item on Amazon that I personally use, or that has been purchased by many members of the audience and which I have researched enough to recommend.

Today’s TSP Amazon Item of the day is the Victorinox 6-Inch Semi Stiff Boning Knife. I recently did Episode 3366 of my podcast entitled Butcher Your Budget with DIY Meat Cutting. I featured this knife in that episode and many of you picked one up, so given how great it is, I decided to add it to the TspAz catalog.

Let’s start out with the purpose and function of a knife like this and how it teams up for processing meat with the 8 Inch Breaking Knife I previously reviewed.  Right in the name this knife excels at “boning” which is why if you look at it, it is quite similar to a common fillet knife for fish.  The curve in the blade is my personal preference for this type of knife as I feel it allows more finesse in fine boning work.

So why “semi stiff” vs. stiff or flexible.  Think Goldilocks here, not to hard, not to soft, just right.  We want some flex at times when working close to a bone on a shoulder or say deboning a chicken thy or breast.  At the same time by being semi stiff unless you use a significant amount of pressure it will stay straight.  What this results in is precision cutting because the tip of the blade remains perfectly aligned with the handle and your hand.  Translation you know exactly where you are cutting at all times.  If you watch videos of professionals breaking down, trimming and deboning cuts you will see them consistently preferring the “semi stiff” version of a boning knife.

So let’s get on to the second main use of this type of knife, trimming.  While I often trim thick fat caps with my breaking knife, a knife like this one is really great for finer trimming, especially removal of silver skin and such which requires very fine work, more like removing the skin from a fish that simply reducing the amount of fat and leaving some behind.

So moving on to price-to-value ratio this one has it.  At just over twenty bucks (on sale at 21.99 as of 9-12-23) you are getting a tool that will serve you for decades if you take proper care of it.  The Victorinox name really speaks for itself on quality.  High end steel, Swiss quality, etc. You just can’t do better especially at this price point.

So if you really want to take your meat cutting and/or game and livestock processing up a notch, consider adding the Victorinox 6-Inch Semi Stiff Boning Knife to your kitchen and of course it pairs perfectly with the Victorinox 8 Inch Breaking Knife and a good honing steel.

P.S. – If you want this boning knife with a wooden handle as referenced in the video below you can get it at this link.  It will cost more, it does look better, but I actually prefer the rubber handle when dealing with large and at times slippery cuts.  Doesn’t hurt that it has the same steel, performs the same way and costs a lot less either.

Processing Livestock with the Back Woods Butcher – Epi-3563

Kyle is the owner operator of the Bodyshop 603, a custom exempt butcher shop in northern NH. He also has a growing social media on TikTok and YouTube that he uses to expose his work in the butcher shop and on the farm. Kyle is breeding a cold weather tolerant breed of pigs using a combination of production and heritage genetics. He will also be teaching multiple butchering classes at the upcoming self reliance festival.

He returns to TSPC today to discuss the need for less restriction on small farms and homesteaders to process and sell the livestock they raise and what we can do to further that goal.

Can we still “Wake People Up” at this Point? – Epi-3562

Talking to some of my fellow podcasters, content creators and influencers lately I have heard many of them say things like, “I don’t even bother red pilling people any more”.  I often wonder if any of us have actually ever successfully “red pilled? anyone, ever?

For people not familiar with the term it comes from the movie the Matrix and simply means to reach someone who has believed the lies of media and government in a way where they wake up, like Neo in the movie and see “the matrix” for what it is, a lie.

I think if you’d of asked me if TSPC red pilled people back in say 2014, I would have proudly said yes.  Today I don’t think so, I don’t think we do it now, I don’t think we ever did and I don’t think anyone “red pills” anyone else.

Why?  And what does it matter to our lives?  Tune in today to find out.

  • Minds were only awoken in the movie when young and when they were already waking up

    • Most people want to be led, controlled and “protected”
    • There is no way to fix this, you can only improve your life and work with the willing
    • You will need to work with people who are still plugged in and let them be so
    • There are solutions but they are individual and community, there is not political party, no ideology, etc. to change it all for the better
    • Government is always trying to get more power, you will never change that, ever
    • There is no winning here, there is simply not losing
    • What you think won’t effect what happens, thinking, however, can show you what is likely to happen
