• Traditional from large cuts – These are cured in a way where the center is still a bit moist.  Think cured prosciutto  as texture but made with beef or bison.  They then slice it super thin and package it so it won’t dry out. This is the most authentic biltong you can get.

• Stix – These will seem more akin to jerky but it is also a type of biltong and tastes different then any jerky you have likely ever had.  The stick as about the diameter of a pencil and simply long pieces of meat cut with the grain.  These are best cut into small pieces with scissors.  The flavor of these actually makes them my favorite of the the two forms of biltong they offer.  It is more intense and the slightly tougher chew slows me down so I don’t inhale a full bag in one go!

• Droëwors – If biltong and sausage had a baby it would be Droëwors.  This is a form or dry sausage that is also fermented just by its very nature.  It is a softer texture than many dry sausages and hence many prefer it chilled as it is more firm when chilled.  I am also addicted to these but will say they may not be everyone’s cup of tea.  But you should totally give then a shot.
