When ever the topic of low carb eating comes up almost instantly I get emails with two questions. Question one is, well how do we prep food wise with out rice, beans, wheat and pasta? The second one is, well what do we grow in our gardens? Today we will take on question two, because it is the easier one to discuss and I have to manage to do two shows today due to a commitment to friends tomorrow.
Recently I embarked on a full on keto diet, my results have been amazing, you can track them along with me at this Keto Diet Playlist on my YouTube Channel. But today we really are not going to talk about that so if you have zero interest in Keto or other low carb plans what you will get today is gardening for nutrient dense and high financial ROI food. We will also say just a little bit about livestock and the role they play in this.

- What is low carb eating, simply put 20-40 carbs a day
- The role of livestock in homesteading when low carb and some good choices
- Quail – meat and eggs
- Chicken – meat or eggs plus culls
- Ducks – same as chickens
- Rabbits – meat
- Pigs, Cows, Goats, Sheep require more effort
- All provide fertility
- The good news is a lot of low carb veggies are high dollar and or high turn over
- My 20 best crops for the Keto Gardener
- Leaf lettuces – .5 net grams per ounce – note POINT 5
- Spinach – .5 net grams per ounce – note POINT 5
- Swiss Chard – .6 net grams per ounce – note POINT 6
- Mustards – .5 net grams per ounce – note POINT 5
- Asparagus – .7 net grams per ounce – note POINT 7
- Broccoli, Cauliflower, Brussels Sprouts – .8 -1.25 net grams per ounce
- Kale and Cabbage – Under net grams per ounce
- Green Beans – (pick young) – About 1 net grams per ounce
- Peppers (hot and sweet) .9 – 1.25 net grams per ounce depending on variety
- Okra (great at thickening) – 1 net gram per ounce
- Radishes (wow do I have good news here) – .46 net grams per ounce (note POINT 46)
- Tomatoes – .7 net grams per ounce (note POINT 7)
- Summer Squash – .65 net grams per ounce (note POINT 65)
- Seed Pumpkins – 1 net gram per ounce
- Celery (regrowing cores is the easiest thing to do) .3 net grams per ounce (note that is POINT 3)
- Green Onions – 1.3 net grams per ounce
- Ginger (yes you can) – Used in very small quantities
- Cucumbers – About one net gram per ounce
- Sweet Potatoes (summer greens, emergency calories) Less then net gram to the ounce raw
- Ground Nut (apios americana) 2.5 Net Carbs to the Ounce
- Bonus – Sunflower Microgreens – Per Ounce about .29 net carbs but 1.4 grams fat and .7 grams protein (12% ~ carbs ~ 59% fat ~ 29% protein)
- Translation, it isn’t even hard and Keto Dieters and should garden for economic and quality reasons alone

Hey jack for your radish loving friends that hate the heat or “bite” an old man proved to me that if grown in the fall where harvest is around late sept- anytime October they don’t have that same bite as summer picked radish! – Kansas City mo area…. Great episode!
