What Victorinox has here is a knife easily as good as knives 3X its cost even when at full retail. Is it the absolute best breaking knife on the market. Likely not but this is a utilitarian tool and you will find it in the hands of professional meat cutters along with a similar version by Dexter Russel all over the country. It is just an outstanding value and a very utilitarian tool. Which is why it is the choice of pros in the meat processing industry. Bluntly this is not the area in your life for an expensive custom or hammered Damascus knife from Japan. What you want here is quality and performance and this knife simply delivers on that time and time again.
So, why the 8 inch option? Well, I am mainly suggesting this for people that process their own deer and do their own meat cutting beginning with sub primals that you can source in warehouse stores, restaurant supply stores and the like. You are welcome to get yourself a 10 inch or 12 inch blade in the same pattern if you want but I think it’s honestly overkill unless you are breaking down something like whole beef or elk or something like that. The 8 inch length is great for getting nice clean cuts on even large steaks and chops and still small enough to handle well when trimming fat caps. P.S.S. – If you want this breaking knife with a wooden handle as referenced in the video below you can get it at this link. It will cost more, it does look better, but I actually prefer the rubber handle when dealing with large and at times slippery cuts. Doesn’t hurt that it has the same steel, performs the same way and costs a lot less either.
