Today we are joined by long time listener Kelsey Fernandez to discuss raising, harvesting and processing pork at homestead scale. We talk pig breeds, harvesting methods, butchering and even curing pork in this episode.
Kelsey Beck Fernandez is a former suburbanite that was introduced to regenerative agriculture via his career in wine sales. His studies in wine, coupled with an interest in quality food, lead him to pursue homesteading with a particular focus on whole animal processing on the home scale.
After taking a class in 2022 on traditional husbandry, harvesting, and preparation of home raised pigs, he now always has pigs in the yard, a freezer full of meat, and rafters replete with home cures. His journey has taught him that the simple methods of raising healthy animals and slaughtering them humanely are the fundamental ingredients for creating delicious food that also nourishes his family.
Kelsey lives with his family of 7 on a 1 acre homestead in Southern California where they incorporate pigs, chickens, and rabbits into a burgeoning permaculture oasis. He now uses his background in education to teach others how they too can raise and harvest their animals for their families and friends.

Hi jack i totally appreciate this and all your episodes ive been watching you for a long time but i have a question and might be a good segment for a future show what do you do with all the items left from the processing of the animal . The hair bones feathers ect . On a farm you might be able to dump it on the back 40 but in suburban area can’t throw it over the neighbors fence. Is it good for any type of fertilizer. Thank you
Yes all the leftover bits can be used as firtilizer however you may need to process some of it.
The feathers, skin, hair etc can be burried or composted. They may take a while to decompose.
Bones you may need to bake/cook before pulverizing and then they would be great firtilizer as well.
