Today I want to discuss curing meats.  To do that we are joined by Ken Strayer a member of the TSP audience.  Ken has been curing meats for a few years and did a great job of answering my questions on the basics of curing meats.

He was however, extremely efficient and his knowledge is limited to a few types of cured meats so the interview as only about 28 minutes long.  It was 28 extremely informative minutes but my shows are generally at least 50 minutes to an hour in length.

So I am adding a bonus segment on the curing of meat via biltong method to the beginning of today’s show along with some stuff I picked up on simple quick “sausage style” cures.  Those might be some cool things you can do for the coming holidays.

Also next week we will have The Farmstead Meatsmith on next week.  That will be a somewhat more advanced show.  So think of this show as part one of a two part series.  This will form the basis of your understanding of making cured meats, the basic process, etc.

Ken is an awesome guy, he is a medically retired US veteran who served for 10 years in the United States Navy.  He is an avid outdoorsman who spend most of his free time backpacking and fly fishing throughout the North East.  He spends the rest of his time tending to his garden and small homestead, and cooking-and a hobbyist at smoking and curing meats of all types.  A listener of the show for about three years now, a supporter of liberty, and an Oathkeeper.

Well the time is approaching rapidly that we will be in the full swing of fall harvesting and even planting the fall gardens.  With temps are or near 100 in many parts of the nation today it may seem a long way off, yet it isn’t, cooler weather and the bounty of the garden and the field are just around the corner.

As we turn our focus to harvest both of garden and game it is a good time to discuss what to do with it all.  You can only eat so much fresh, your neighbors will only smile about so many free zucchinis.  You worked hard for it, when it comes to game it is also hard work, time and money, today we talk about making it last.

Making Biltong Video Series

No show today folks as I have to take my wife to the dentist.  Nothing major but they do have to sedate her and therefore she can’t drive afterwords so I am choosing today to release the long awaited video series on biltong.  I talk about it all the time on the show, now you can see how to do it step by step.

The method you see me use is slightly different from some others I have seen online.  I have chosen my recipe and method from the writing of Peter Hathaway Capstick who spent half his life living on Traditional South African Biltong in the bush as a professional hunter and game control officer in the African bush.

A few things about this series in particular…

  1. I used a dehydrator for the bulk of the biltong because some people live in very humid areas
  2. The dehydrator was not necessary, the traditionally hung meat actually finished just as fast
  3. The quality of both batches was similar but I actually found the traditional a bit better
  4. The dehydrator was not any faster, the initial rapid drying formed a shell and the centers in the dehydrator took much longer to cure
  5. My advice don’t use a dehydrator unless climatic humidity requires it and then I would try a fan before doing anything else.

Anyway for some reason the final videos came out a little fuzzy in image quality, I am going to try to figure out what caused that but the videos will definitely show you exactly how to make biltong and how easy it really is.   As for how good it tastes, you will have to make your own to find out.  Beef works great but the leaner the better, the best comes from red game meat like venison, elk or bison.

I am broadcasting from home today (very early by the way) because I have to go out on a location to do some film work and won’t have the option to upload the show from my office.  I didn’t want to leave you with out a Friday show so I knocked one out at the house before I left.

Today’s show is all about ways you can start to become more independent.  My challenge to you is to pick one or a few of them to do right away.

Today we have a wide variety to discuss but the main topic is the 5 primary rules for food storage. Specifically how to build up a truly sustainable food storage and production program. Today’s show is mostly based on the article that I had published on Lew Rockwell today. (The Article on LRW.com).

In the intro segment today I talk about a random assclown blogger that is lying about me saying such things is I “teach isolationist survivalism” and that “I make up fantasy lies about Barack Obama” and worse that I am a right wing shill.  Clearly this twit does not comprehend that I am a raving libertarian often to the dismay of many of my conservative listeners.  I don’t mind critisim, I don’t even mind the ocassional out of context comments but this person is a liar.  Please go visit her, inform her she is a liar and make her aware that I have invited her to come on TSP to discuss these lies directly.  Her pile of crap hack piece (can be viewed here)  Oh and you do loose credit when you write about someone and can’t even spell their name correctly.
